-#Preheat a lightly oiled griddle or waffle maker on medium heat. Place the mix into a large mixing bowl. Whisk in 1 1/4 cup of milk and 3 large eggs to combine thoroughly. Whisk in 6 tablespoons melted butter until the batter is smooth and silky. For pancakes: Ladle 1/4 cup of the batter on the griddle. Cook until bubbles appear over the top of the pancake and the bottom is golden brown. Flip and repeat on the second side, about 1 to 1 1/2 minutes cooking time.
